Food pairing post....AGAIN I need help deciding which veg to cook with me new favorite Friday night dinner.

Recently I have taken to making the Gordon Ramsey scrambled eggs with smoked salmon, chives grown in my garden and homemade creme fraiche. The preferred starch is hash browns with onions and a bell peppers (just a little, though, my husband's digestive tract does not do peppers very well). I have been struggling to come up with a veg that "goes" with this combo. I love love love the eggs and hash browns for Friday night dinners, and I want to love a veg to go along with it. Help?
Zucchini strips brushed with garlic olive oil and roasted?

Some variation of country fried tomatoes! They're very rusticated and breakfasty. Add spinach for even more deliciousness. My go to veggies for breakfasty-type dindins are tomatoes and spinach.

A very simple but delicious side is fresh green beans simmered with fresh tomatoes in olive oil and water. Just cook the beans and tomatoes down for about half an hour with lots of salt, pepper and fresh garlic. A cup or so of water, a few tbsps olive oil. Soooo good.

Can you trade in fruit instead? You could go classic diner breakfast with orange slices. Or a little bowl of mixed fruit.

I may be the odd one out but I think I'd also like something pickled or a chutney or something with this meal. Something bitey or sweet that feels like it's "cutting" the fat and starch.

What about oven-roasted tomatoes? Not a veggie, but they'd go great with the other stuff.

Homemade creme fraiche. (I've never heated mine -- just mix cream and buttermilk -- but this sounds like it might get the cultures more active.)

Mudpuppie's got it, I mix cream and sour cream and leave it out overnight, voila! Creme fraiche.

Thanks for asking, alto (and by extension, boo to all of you that failed to mention that I just had MAJOR SURGERY/passive-aggressive hamburger). My surgery was two weeks ago today, and I feel like a million bucks. I haven't been doing much cooking, but since it is one of my main hobbies (along with break dancing and bonsai trimming), and this dinner is super-easy to make, I wanted to eat it tonight. Thanks for all the suggestions.

I've been doing this with asparagus, since they're in. Ramsay goes with tomatoes. I think both of them tend to work because they're a bit acidic (well, my asparagus are because I douse 'em with lemon juice along with the butter).

Oh, and instead of creme fraiche, I use greek yogurt. I find that I have it on hand more often, and I like the sour bite.

The problem with asparagus (and it really isn't a problem) is that we eat asparagus a lot as it is (two or three times a week). It never really goes out of season in the Cackalackies. I have not tried greek yogurt, I will have to give that a shot.

Ultimately, we had sushi for dinner because I ended up working too late to cook. Dinner tomorrow night.
