Enchiladas! I just made the last recipe here, except that I used diced chicken breast rather than squash (sauteed it for 10 minutes rather than 3 to avoid the salmonella thing), and it was OMG yummy. That was the first time I've ever cooked with tomatillos, and it was nice to go from gawking at them in the supermarket to actually doing something good with them.
Both of those recipes look yummy and thumbs up on the change to chicken (squash is yucky).

I'm drooling. That sounds SO delicious, and I really really want to try this recipe... but alas. Here in Australia, I cannot get tomatillos (that I know of), definitely cannot get poblano peppers anywhere near me, and have not yet seen either pepper jack cheese or corn tortillas. *sigh* I'm really missing Mexican food!

Glad to hear it turned out so well for you, though. Congrats! :)

I am thinking of doing a USA road trip and just stopping off to have MeCha people cook for me. I suspect that it would turn out very well :)

Another way to use tomatillos is in salsa verde, which I make at intervals, parcel out into small containers, and freeze. Simply Recipes has a good and very easy version (you could use Anaheim peppers if you have issues with the heat of jalapenos or serranos). It's great in enchiladas, of course, but also over grilled meat or chicken or seafood, or with fried potatoes, or in an omelet. (I've also been known to can it in pretty jars and give them out as gifts, back when I was broke and had a long list of people to whom I owed Christmas presents.)

I was just gawking at some tomatilloes the other day. This sounds amazing. Enchiladas are my favorite food and infinitely variable...I'll try this - a nice veggie dish!

Easy salsa:

Remove the husks from tomatillos. Wash well. (They're sticky!) Dry well.

Place under broiler, along with a couple of jalapenos (or serranos, or other chiles that meet your tolerance level) and an onion (cut into quarters). Shake every once in a while to ensure even browning. Broil until blistered. Place in a blender with some salt. Cilantro, if you like it.

That's it. Easy and very yummy.
