:-) It's SO good. I accidentally left it at work this weekend, so instead I'm sitting here with a jar of refrigerator pickles. They're good and all, but there's nothing like a good summer kimchee.
(Also, I'm trying to decide whether I should feel bad about spelling it kimchee instead of kimchi.)
I made some refrigerator pickles a couple weeks ago: Pickling cukes, dill, garlic, peppercorns. The brine was 2c vinegar, 2c water, 3T salt, and 1T sugar.
We've been noshing on them constantly. They're the perfect antidote for summer.

LoriFLA, I did know that. Still, I felt a little insecure in there.
I made sweet refrigerator pickles this time. I can't remember the ratio of vinegar to sugar, though. The other ingredients were celery seed, onions, and peppers. Mine were purple peppers, because that's what was ripe outside.
The cucumbers I ended up using in the kimchi were pickling cukes I bought in order to make bread and butter pickles. My mom never sent me her recipe, though, so they sat there on the counter for too long. Thus the kimchi.
If you find (or remember) a recipe for the sweet pickles, Stewriffic, I'd love to have it.
I have cucumbers coming out of my ears, and still have pickles I canned last year. Today I put up some green beans (frozen), made a zucchini cake, and turned 4 lbs of mixed heirlooms into sauce.
(Knock wood) Having actual rain this year has majorly helped my garden's output. Damn.

We have been getting wonderful rain as well. This is the Florida I know and love. Afternoon thunderstorms every day in the summer. For a while there it was dry city.
