Making veggie stock - questions inside Inspired by

Ok so I decided to make some stock with my crock pot, but I already was too skittish for chicken stock so I decided veggie stock would be a better idea (I tend to use it more often anyway). Sooooo many questions:
- I have two huge carrots, a bunch of celery, onions, mushrooms, one tiny turnip. Can all of these guys go in there or what?
- How long should I simmer them for? Overnight? I don't have a stock pot, only the crock pot, and I am not buying any extra tools for this endeavor. I know it can be done it's the how that I'm not quite clear on.
- I don't have any kind of grindy instrument like an immersion blender or a food processor. Is this going to impede me terribly?
- Seasoning. I have bay leaves, garlic and your usual assortment of spices. Yay? Nay?
I rarely get stressed out by cooking as I just throw things in, but making stock seems like one of those things that could just end up with a vat of foulness if you muck it up. Thanks in advance, foodies :P
