I command you to make soup. If you have not made misskaz's spinach meatball soup yet, do it. Seriously.[More:]
I made it a couple of days ago and it's awesome! We're eating the leftovers tonight and I'm sad it's almost gone. I ended up using beef broth instead of chicken because I'm a red meat kind of girl.

It also helped me get more confident in soup making again. I recenly attempted to use some leftover ham from the holidays to make soup. And I made a TON of it. It came out tasting funky and I couldn't figure out why. I tried to fix it but had no luck. I felt defeated. Turns out that some noodles stuck to the bottom of the pan and burned. They ruined everything.

So thank you misskaz for a wonderful recipe!
I've made a batch each of split pea and vegetable barley soup this winter - does that count?

Mmm... split pea. I so wanted to make split pea and ham soup with my leftover ham, but the BF doesn't like pea or bean soups. My soup failure is really his fault.

Wow, I'm so glad you liked the soup! It really is delicious, isn't it? I am a soup making fiend in the winter - all you need is some broth and whatever else you've got in the house.

This post made me feel all warm and fuzzy inside. Whee!

You know what's really good for soups? Mushroom stock. Take some mushrooms, throw them in a pot with a bunch of water, add a tablespoon of salt and some ground pepper (which disguises the schmutz that comes off the mushrooms), and gently simmer for an hour. Don't add anything else -- no onions, carrots, celery, nothing.

The flavor is an excellent base for most any soup. Especially mushroom barley. Yum.

That spinach meatball soup combines my three favorite things: spinach, meatballs, and soup. Will make!

Mrs.Pants:

Mushroom Barley Soup

Dice some onion, sautee in olive oil (since you're not using butter). Add salt, pepper, dried thyme, and a bay leaf. When onions start to brown, throw in about a pound of mushrooms. I use crimini. Sometimes I halve them, some times I slice them thick. Your call. Cook with the onions until mushrooms release their liquids.

At this point, you can add 1/4 cup of red wine if you want reduce. Whether you do this or not, the next step is to dump in a lot of mushroom stock (instructions for making it above).

Bring to a boil, add a couple handfuls of barley. (Rinse it first.) Simmer until barley is tender. Add chopped parsley.

This is one of the tastiest things ever that only has, what, five ingredients? The mushroom stock is the key.
