Spinach Meatball Soup Hooray for successful cooking improv! [More:]We have very little food in the house, and don't intend to buy any because we'll be out of town next week. We needed to figure out what to do with very little - basically some egg noodles and frozen ground beef.

Thanks to some old-but-still-usable carrots and celery, an onion, chicken broth, and frozen spinach, we came up with a really good soup! I love when that happens!

Sounds tasty! I bet if you swap the egg noodles for a more traditional pasta it would be close to Italian wedding soup, too (which is my all time favorite).

I love putting spinach and celery leaves in my soups. I especially like that soggy leaf texture against the chewier noodles.

We just had the leftovers for lunch today - and like most homemade soups, it was even better the second day. The perfect lunch for a day with a wind chill below 0!

Thank you for the recipe, misskaz. I made it tonight and just finished eating the first bowl. It tastes incredible! Can't wait for the leftovers stage when the flavors really build.

I made the soup today! Super nice, especially tarted up with bit of tamari. I also grated some parm on top. It was very warming. Thanks!
