What's for dinner? [More:] It's been sweltering here the past few days, and I'm running out of ideas for hot-weather dinners. Two nights ago, it was cold peanut noodle salad; last night, I made egg salad with spicy yogurt dressing (on a fantastic multigrain bread, the recipe for which I will post someday), and a vegetable-packed chilled pasta salad with lemon and parmesan.

Tonight, um, I don't know. Whatever it is, I'd better make it now so it can be cold by this evening.

What are you having, did you have, or do you hope to have for dinner?
We're going out. Crabcakes and mojitos.

Turkey breast, sliced, sauteed with garlic and mushrooms, then added to the skillet is sliced courgettes (zucchini), carrots, peppers and some asparagus. Salt, pepper and basil for seasoning. When it's almost done I'll add some spinach and wilt it in.

Dinner at Feinstein's, before the show (Mary Wilson of the Supremes). So, probably some soup or salad, skirt steak, and fruit desert thing.

Cubano black bean soup with brown rice thrown in, salad. Wine and olives in chili oil and goat cheese for an appetizer. Tamarinds for dessert.

Dinner out is starting to sound pretty sweet. Somewhere cheesy with air conditioning and frozen drinks.

I'm not so retro as I must sound, spending the day at home making dinner for My Man. But these days I'm home during the day, and I'm newly recovered from being bedridden. I missed cooking!

Not sure. We don't have any food, so I'm inclined to eat out. However, the past couple of nights have been way too hot to want to eat anything, so we've just had a couple of beers and cheese and crackers. Mmm healthy.

I had an avocado and tomato sammich on pita last night, and it was really satisfying. It was just too freaking hot to care about food, and of course way too hot to cook. No way I was heating up my kitchen.

I made a good spread for it by pureeing canned artichoke hearts with some vegan mayo. Yummy. We had mojitos with the sammiches. Tonight we might have cold crab cakes and cole slaw.

Grilled pork chops, mashed potatoes, field peas, cornbread I do on the top rack of the grill. I love air-conditioning, and move the major cooking outside 2/3 of our Florida year.

Haven't made a pie in a while, so I might get ambitious after the sun goes down.

If I recall correctly it's liver & onions tonight in the dining room at work, which means I'll be having the frozen Asian noodle & vegetable thing I have stored in the freezer there for just such an emergency.

The heat has me eating kicking lemon salads all the time. Good thing I like them, but I may want to have something different tonight.

And, a favorite of mine for hot weather is chilled Gazpacho soup. And, no, don't have recipe here - I'm at work... boo.

I don't have any clue what to do for dinner tonight. I'm having a crappy day and I know I'm not going to want to cook. But I'm also tired and I don't want to go out.

Yay! I already did!

At that point, it was just a rough toss-together recipe. I've refined it a good deal, but my notes with measurements and comments aren't handy. (One note I remember: I've decided it's much better without the sweet potato. Too starchy.)

I'm kinda sorta toying with putting together a cookbook. So many people, on learning we keep vegetarian at home, ask earnestly "But what do you eat?" I'm thinking there might actually be a market for this book. In any case, it'll be good to have all my recent recipes and food chemistry trivia recorded together somewhere.

When I get ready for the first round of testing, I'll need people who will be frank about the shortcomings of the instructions and the finished dishes. Would some of you be interested in testing recipes?

Oh, hell, I thought that link contained the peanut sauce, too. Here it is.

A bit more detail: basically, it's a great glomp of pb (I like natural) with minced garlic, ginger*, scallions, tamari, a sploosh of hoisin, a squirt of the hot chile sauce whose name escapes me - y'know, Rooster sauce, a splash of roasted sesame oil, and a good splash of rice wine vinegar. Dump all that stuff in a jar, add some water, and shake it like blazes until it's creamy and well mixed.

*For this, I like to freeze whole hands of ginger, slice some off, thaw it, then squeeeeeeeeeze it in the garlic press to produce ginger juice. You should have thought of this yesterday.

Um, this is soooo not the style in which I'm writing the cookbook.

Ooo, I love chicken pot pie. I'm stuffed at the moment, though. Just got back from Fatty's with Jon. Had grilled shrimp, calamari, tostones, crab cakes, chocolate rum flan, tres leches cake, and lots of mojitos. Can't. Move.
