So, I made cauliflower rice today. [More:]I've cut out pretty much all starchy carbohydrate from my diet. No bread, pasta, potatoes or rice. If I'm making something with a sauce, it ends up sort of soupy due to lack of something to soak it up.

But today I came across a recipe for cauliflower 'rice'. It's absolutely delicious, easy and quick to make, and was the perfect vehicle to soak up the tomato sauce with my chickpea and courgette stew. Best of all, no fat, gluten free and low in calories.

Interesting. Cauliflower always strikes me as being too wet to absorb or stick to sauces but I'll have to try this.

Senyar, do you like cauliflower normally? I saw a recipe and thought about trying it.

I haven't made it myself but the masher cauliflower my mom made was virtually indistinguishable from mashed potatoes. I suspect it had a lot to do with the amount of butter, salt and garlic though.

I love cauliflower, needlegirl. The cauliflower rice tastes totally different from, say, steamed or roast cauli, it doesn't have that 'farty' element to it.
