Skirt Steak I have some marinating in the fridge, will be cooking tomorrow night. Should I grill it (in a pan on the stove)? Broil it? Give me your advice.
My advice, if you don't have access to a grill, is sear it on both sides in a pan on the stove and then finish it off in the oven.

Ah yes, I read that was an option, too. How long/how hot in the oven, do you think? Now I'm thinking I might make it tonight, to save myself the work tomorrow!

Ok, the bf has corrected me and said that since skirt steak is so thin, you can just do the whole thing on the stove and skip the oven part. So basically, just sear the outside and cook a little longer until it's done how you like it. We eat everything rare, so probably just the searing is enough for that.

OK I'm always sort of scared to buy skirt steak because I think it will be too tough. TPS what are you marinating it in? Let us know how it turns out.

A mix of balsamic vinegar, red wine, soy sauce, and garlic. Mmmmmmmmm.

Funny, I've been marinating some flank steak since yesterday, to be cooked tomorrow.
Same kind of deal, I guess. Olive oil, rosemary, balsamic, dijon and shallots. Sear both sides at super high heat on the barbeque and there you are.

I have not cooked skirt steak but I have cooked flank steak, which I usually either broil for 2-3 minutes a side or sear in the cast iron for about the same time. That is good.

I seared it in a pan! It was good- I did it in 4 batches, and every batch got better and better as the pan got hotter and more crusted with black stuff, lol. I ate some of it last night and put the rest away for lunches! Thanks all!
