Oh Sweet Jebus, This was Delicious [More:]Grilled Salmon in Lime Butter.
Want to know how easy it is to make? 1/4 lime juice, 1 pressed clove of garlic, salt and pepper: puree. Drizzle in 1 melted stick of butter. I used a hand mixer.

From a thick fillet of salmon, salt and pepper, cut 3cm vertical strips. Grill 4-6 minutes per side, skin side first. Serve with a small dollop of lime butter and some lime zest on top.

I also served this with fennel root sauteed in a little olive oil.
I'll take two, please! YuM!

I grill salmon al ot of salmon when its in season (I live in salmon country after all) and this isn't too far from my go to recipe. What I do is mix garlic and olive oil and brush onto a whole filet. Then spread liberally with rosemary and top with discs of lemon. I add fresh ground pepper melange as well but its not necessary. Never use salt but its there if people want it. Grill on one side only either on tin foil or a cedar plank which I've pretty much guarantees it doesn't dry out.. Thats pretty much it; the salmons done when the middle of it is able to easily come apart with a fork.

Growing up my dad always used just garlic and melted butter. Can't go wrong there, but I've come to prefer the olive oil.
