Let's talk cookies What's your favorite simple cookie recipe (as in nothing more complicated than flour, butter, sugar... and maybe milk, eggs, baking powder/soda)?[More:]
No actual recipe details needed (of course they'll be appreciated), just a short description, like "sugar cookies", or maybe "shortbread with cornstarch instead of flour" is fine.
Gingerbread or chocolate chip - and they have to be soft.

Oatmeal cookies! I use the recipe from the Quaker oats tub, minus the raisins, and I generally use whole wheat flour. Mmmmmm, love 'em.

I got into a gingerbread kick around Christmas (the dough also makes good gingersnaps), and recently my wife found a great chocolate-chip cookie recipe.

Peanut Butter Oatmeal Chocolate Chunk Cookies - you can buy chocolate chunks in the baking section or just use semi sweet chips.

THESE ARE FREAKING AWESOME and EASY. (I usually use a bit more peanut butter than the recipe requires because I love peanut butter.)

Simple and addictive: Chocolate Crinkle Cookies

While we're talking about gingerbread cookies, this is the best recipe ever (but it doesn't really fall under the purview of "simple." I mean, it's not hard, but it's not dead easy either).

These are awesome, and the recipe basically consists of 1) mix wet things 2) mix dry things 3) mix everything 4) bake.

The easiest and most satisfying cookies I make are chocolate chip-oatmeal-coconut, with a little almond extract included (in addition to the vanilla). The only problem is that the dough is possibly even better than the cookies, so baking has to be done right away.

Snickerdoodles are my second favorite.

Meringue cookies! Egg whites, sugar, vanilla extract, dash of salt. Slow oven, bake on parchment if you have it, brown paper bag if you don't! Easy peasy!
