Quality chicken stock in one hour? This changes everything.
Lots of weeks I will get a Costco chicken, have pulled chicken the first night, then something like chicken tostadas later, then save the carcass for stock, along with a lot of veggie trimmings and orphan garlic gloves.

I would love to have a pressure cooker but I can't store everything I have, as it is.

We're kinda where dan is - no room to store another gadget. But the mister makes an awesome stock in the crock pot. There are two chicken carcasses in the freezer waiting for his magic touch. ;-)

Don't have a pressure cooker. I don't really mind making stock that takes longer. I only make it every couple months, anyway. It is true there's no replacement for good chicken stock, though.

I have only made stock from scratch a couple times. I usually use boxed stock. I have always wanted a pressure cooker.
