I feel like cooking. What do I want to make for dinner?
If it's not too hot to cook pasta....make a nice bright tomato sauce! Oil, then onions or Shallots, plus garlic...when they are softened, toss in a bit of tomato paste, then some nice canned tomatoes, whole, which you've crushed in your hands. I really like crushing tomatoes by hand, it's a peaceful task.
Cook it down for a bit, 15-20 minutes, add a bit of white wine if you have it around, and some other veggies if you wanna, but it's sure not needed. Oh, and a little bit of sugar. Maybe some oregano if you've got some handy. Lots of folks like basil for this, but I'm not a huge basil fan.
Cook up some pasta...toss 'em together and revel in the bright tomato flavour!
There is some fresh halibut around in these parts. . .halibut fish and chips tonight. . .the chips being some small potatoes sliced into rounds and broiled with garlic and cajun spice.
I've been thinking of making another dish recently too, but I'm afraid it's not much better, carb-wise. It's definitely one of those you-only-live-once dishes:
A little bit of olive oil, like a little bit in the pan, then toss in some chopped pancetta. Fry that up for 5-10, then add some chopped woodland mushrooms, whatever wild mushrooms are handy. Cook them in the olive oil/pancetta fat 'til nice and soft. That when you add some cream. Again cook for another 10 minutes or so, but not high heat, just mellowing-and-coming together kind of heat.
Cook up some gnocchi, and then drain...and toss together with the cream/mushroom/pancetta mixture and top with some nice grated parmesan.
We had pizza, the Friday night staple. Dough is easy, toss on some sauce (see richat's suggestion for sauce), add mozzarella and whatever toppings you got laying around, bake at high heat. NOM.
I think you should make a nice roast chicken, a spinach-and-ricotta pie, and some potato salad. Then tomorrow, you should take those three items, place them in a basket along with a chilled bottle of white wine, and go to a park. And there you should have a picnic.
I ended up making tuna noodle casserole. Not classy, I know, but I've never made it (or eaten it), and I've been curious for a while. It's in the oven now. I used all fat-free or lowfat or whole wheat stuff in it, so we'll wee how that goes...
I also bought an acorn squash to make another time this weekend. Another first.
