Interesting. I like cilantro (especially in pico de gallo), but arugula tastes like potting soil to me unless it's diluted with other lettuce. I didn't know other people (including Julia Child!) disliked it.
Several flavor chemists told me in e-mail messages that they smell a soapy note in the whole herb as well, but still find its aroma fresh and pleasant.
that describes me - I can smell and taste the element that people dislike in cilantro, but I don't dislike it. The greeny, limey-fresh scent overpowers it enough for me. I may be in that category of people who grew up with it and have a familiar-food pattern in my brain for it, since I was raised on Tex-Mex til the age of five, pretty much.
