pretty much most things? It's one of my ways to get the kid to try new food.

Agree with gaspode! Eggs are the universal recipient of all other foods.

Spinach or broccoli rabe...oh baby. You have to cook the broccoli rabe first.

What gaspode said. Also, I like feta.

Texas Pete. (Or in a pinch, Tabasco.)

Scallions and chopped serranos. The scallions need to be just barely warmed, and not cooked.

A tiny pinch of curry powder.
Sounds gross but it's great. My mom did it when I was a kid and I hated it. Now I do it. My kids seem to love it.

I have to try saffron next time, that's a great idea.

Scrambled eggs need three things: a proportionately-sized knob of butter, salt, and a bit of pepper. Anything beyond is potentially destructive to the fabric of spacetime. Or else is an omelet.

Unless they're truly farm fresh eggs, I can't eat them bare. If there's nothing around I'll use Louisiana Hot Sauce.

For my "more healthy me" I do spinach and mozzarella in the mornings, but I'm open to new stuff.

Wouldn't the feta overpower them?

Worcestershire sauce. I can only stand that stuff in eggs or tomato juice, and in either, I love it.

Nira. It's a favorite with eggs here in Jay-pan-land. That's nira.

Onions and fresh thyme.

I love scrambled eggs with onion, green pepper, tomato and feta over toast. But I agree with "everything." It's also one of my emergency foods1 for Sky - scrambled eggs with whatever, or just scrambled eggs with yogurt.

1emergency, as in "out of her regular food emergency," not as in emergency medicine emergency or something.

Salami.

Green onion, green pepper, and leftover asparagus, all diced into scrambled eggs, plus cheese. It's "green eggs". :) And it's delicious.

Goat cheese and shallots.

Also, when I was little, maple syrup on top was the only way to get me to eat them.
That tip came from my pediatrician who said he eats them with syrup every morning. It worked for me!

I was under the impression that saffron is more about color than taste.

saffron does have a sweet taste, it's very subtle. I miss saffron bread.
