Pineapples! Pineapples! Pine? Okay so I drunkenly bought a whole tray of pineapple slices (DON'T YOU JUDGE ME!) and I'm laving town on Wednesday and my meals are pretty much planed and I..don't know what to do with them.
P.S I am not a huge pineapple fan. Gin has its own logic.


(also, the infusion bottle is occupied at the moment)

Well, here's the granita recipe I'm going to use. The bonus is that you can make it now, freeze it, and it will be there when you get back.

Roast pineapple is awesome. Cut away the skin, cut wedges of pineapple (remove the woody core), lay on a sheet of foil on a sheet pan, drizzle with a little brown sugar and cinnamon and roast for about 20 minutes. Wonderful.

You can also use the fleshy side of the skin as a face cleanser. Rub it over your face, let it dry, then rinse. The enzymes in the fruit work wonders for the skin.

Similar to essexjan's recipe is my suggestion that you cut away the skin, cut into wedges, marinade them in maple syrup and cinnamon and then grill them. mmmmmmmm

If they're pineapple rings, perhaps you and your partner want to play ring toss, IYKWIMAITYD.

Otherwise, cut them in small pieces, measure how much you've got, put into a non-reactive pot (think stainless steel or enamel), add 3/4 C of sugar per cup of pineapple, bring to a boil then reduce to a simmer for 15 minutes, stirring occasionally. Skim off any foam. Put into a leftover tub or clean spaghetti sauce jars and into the fridge and have an ice cream social when you come back with pineapple sauce.

If you have more time and an ice cream maker, make proto-sorbet (http://ask.metafilter.com/65766/Cheap-fruity-sorbets-and-ices#988527), put the mix in the fridge and turn it into sorbet when you get back.

Pineapple freezes really well. Get a gallon bag, use wax paper between the layers of rings. Suck out the air with a straw. Golden.
