Turned out amazingly well! Perfect way to use up a bag of nice carrots from the farmer's market. I threw in some fresh garlic and ginger, frozen stock, kosher salt, pepper and some cream to finish it off.
I am going to have it with some toast and blue cheese. nom!

Forgot to mention that I did also use onions (from my awesome neighbor). Toasted baguette slices with melty blue cheese was a great pairing for this soup.

Carrot soup is one of my favorite things - and it's so easy. I also like to add coriander and/or cumin to the garlic and ginger basic flavorings.

It also takes well to a swirl of greek yogurt or a dollop of creme fraiche on top. And chopped chives too.
