Kitchen 911 I have a good load of peas, still on the vine. I have a couple nice eggplants. [More:] I wish to make an Indian dish based on these two main ingredients. I have most of the usual Indian spices, plus some hot peppers and garlic.

Any specific ideas, or recipes anyone can provide? I am out of inspiration at this point.
Got potatoes? Potato, pea & eggplant curry.

Take one cup of besan, or whole wheat flour, season it with the curry powder. Mix it with a cup of water. Let it sit up to an hour. Heat your oven to 450. Pour some olive oil into an ovensafe pan. Mix the peas (out of the pod) into the batter. When the oil is shimmery, pour the batter into the pan and return it to the oven for 20-30 minutes. You can finish it up under the broiler to get both sides crisp, if you like. Serve plain or with yogurt-dill sauce. Or sour cream. Or whatever.

I like to make caponate with eggplant, but I don't think it meets your requirements!

All of my 'recipes' are in units of bits and pinches, so I can't help there. I can tell you, though, that a really awesome garnish for Indian food can be made by assaulting some whole coriander in a morter & pestle, then mixing it with lime zest. Works especially well with yogurt.
