Food Gone Yummy →[More:]In college, some of the dining halls had a veggie sandwich that I still make. Tonight I tried a variation and struck pay dirt:
Ingredients
1 package cream cheese (I use Neufchatel for less fat)
1 T dried dill
1/2 t salt
Flesh from 1 very ripe avocado
4 large pitas cut in half to make 8 half moons
3 medium fresh tomatoes, sliced into 16-18 slices
1 peeled cucumber sliced thinly
Alfalfa, radish, or broccoli sprouts
Mix cream cheese, dill, salt, avocado into a smooth paste. Spread 1-2T of it on the inside of each pita half. Add 2-3 tomato slices, 4-6 cucumber slices, a small helping of sprouts.
Enjoy.
The extra variation was the avocado. It was AWESOME.
