Recipe help, please. [More:]We're rarely sick in this household (knock on wood) but last night my husband was ill -- chills, leg pain, and vomiting. He's feeling better today but still isn't one-hundred percent.

We were kicking around ideas for dinner. He says he wants something with onions, peppers, mushrooms and chicken but no soy sauce -- the thought of it makes him ill. He wants stir-fry, but when I think of stir-fry I think soy sauce and Hoisin sauce.

What can I cook with boneless skinless chicken breasts, portobella mushrooms, crimini mushrooms, onions, and bell peppers?

It doesn't have to contain all of the ingredients and it doesn't have to be stir-fry.

I have garlic, olive oil, other common staples (brown rice, white rice, yellow rice, pasta, vinegars, corn starch, etc.), and most of the herbs and spices.

Any ideas? I was thinking of sauteing everything and adding a few red pepper flakes, salt and pepper, and oregano, but I'm thinking that would be bland.

Ideas?

Add garlic, saute everything, and serve over rice. Perfect for a sore stomach.

It sounds like he wants bland. One surefire thing would be to saute the chix in olive oil and garlic. Add the onions and peppers, thinly sliced, saute until tender, then add a little chicken broth and the mushrooms and simmer gently. Finally, cook up some penne, drain it, and add it to the sauce as the simmering ends, stirring to bring it together and finish it. Oregano and red pepper will be great, plus a little grated Parm.

Alternative: pizza. Make up some pizza dough, pre-cook chicken and veggies by sauteeing each separately and lightly, teat the chicken into bite-size pieces, and sprinkle the chicken and veggies over the dough. If you have a can of crushed tomato, that can be your sauce. If not, just pile it on the bread, drizzle with olive oil, and call it pizza rustica.

If you want to go the stir-fry route sans soy, you could do a basic Chinese-style white sauce. That would basically be chicken stock, with a little bit of white wine (optional), reduced along with some garlic and ginger. Then thicken it up with a cornstarch slurry.

If I were making this, I'd quickly cook the veggies and set them aside. Then I'd make the sauce in the same pan. Once it was thickened, I'd add the veggies back in and toss to coat.

That'd be a healthy, easy, and easy-on-the-digestion way to go for your sick spouse.

That sounds like it would be good in a tomato sauce, or with some crushed tomatoes, served over pasta.

I was thinking tomatoes as well, kelly. I went with Miko's first suggestion. It was delicious -- better than it looks. I did overcook the chicken a bit. I was hoping to avoid that by cooking them whole and then slicing, but my plan didn't work because I still cooked them too long. Thanks, everybody!
