The Muesli Cometh Yes! I have discovered the goodness that is muesli and wish to hear your tips, tricks, and recipes.[More:]It was in the airport. it was dawn. I was hungry. I walked past the shelves of chocolate croissants, oversized muffins, cinnamon buns, and other potentially tempting things, rejecting each for its heavy load of sugars and fats and lack of other nutrients. And then I saw it: a cup labelled "muesli."

YUM. Never tried it before. For years I've tried to get into oatmeal for breakfast, but I honestly don't like plain oats that much, and don't want to futz around with boiling water before I've had my coffee. The muesli was like the perfect alternative: oats, but cold! with nutty, fruity goodness, sort of chewy and faintly sweet, with milk!

So now I want to learn to make muesli at home. I looked up one recipe that involved making 6 servings, but I think that would be gross after a day or so if I'm the only one eating it one serving at a time. So there must be a way to make "muesli mix" and just add the milk at night for tomorrow's serving, so it soaks just enough but doesn't get gakky.

Does anyone have a good method for that? Also, what do you put in it? It seems sort of anything-goes, and I have coconut, dried cranberries, almonds, pecans, and coconut at home.

What else do I need to know about muesli?

As a kid, my mom used to make us another recipe she got from her Swiss friend. It had muesli, but it was a really soup mixture with skim milk and it included whole berries or other fruit chunks. Usually the milk turned a faint blue from the berries. I'm not sure what it was called, but it was really refreshing on hot Arizona days. I haven't seen anything like it since.

I love muesli, but not with milk. For my money the best muesli you can buy in the UK is made by Dorset Cereals. I soak it overnight in apple and mango juice and then serve it with a dollop of greek yoghurt.

Wait, what's this milk soaking stuff you're talking about? Isn't that porridge?

Serious müsli lover also loves porridge, I made my own for breakfast by the time I was nine or ten anyway - I was allowed cereal like other kids but in grandma's house and when mom was home they made hot porridge every morning instead. grandma's was made from bran, dark brown and heavy served with ice-cold milk. Mom's was oats, soft and no real need for milk other than to cool it down, then there was my "Pajala porridge" which I got really good at but I used to forget to prepare before bedtime. It goes a little like this;

2 dl porridge oats
1/2 Dl crushed flax seeds
4 dl water
4-6 dried pitted plums and dried apricots.

Leave in a bowl in the fridge over night, heat it to boil in the morning. It's sweet!
(also, I ran circles around the other kids when it came to all day energy. Take THAT sugar based cereals!)
