What is your very favorite vegetarian stuffed mushroom recipe?
I like barley, mushroom stems, garlic, sun-dried tomato, parmesan, a little bit of lemon zest.
Sorry that's not a recipe, per se. Basically cook some barley with mushroom stock, throw in chopped mushrooms and garlic about 10 minutes before barley is cooked. Remove from heat, stir in sun-dried tomatoes, parmesan, and lemon zest. Let mixture cook, stuff 'em, bake until heated through. Can also top with more parmesan for meltiness.
I pop off the stems, coat them inside and out with a mixture of olive oil, salt, and pepper and then stuff them with a mixture of goat cheese, cheddar shreds, and chives. Then top with smoky paprika and into the oven for 30 min until they are leaking juice and a little shriveled.
Sometimes I add spicy red pepper on top too but my family doesn't like that as much (wusses).
