My dumplings are like hockey pucks. Please hope me! [More:]

I can't get cornmeal in England, only fine-ground corn "flour". My dumplings are suffering. Not enough baking powder? Too slow a cooking time?

How do you make lighter-than-air dumplings, my dumplings?
What type of dumplings are you making? I've only made flour dumplings. Can you share your recipe?

Per essexjan (who's sitting here right now with me, yay!): You need flour, suet (which you can find in the supermarket), salt, pepper, dried herbs, and cold water.

Did you try polenta? I know it's not the same texture.....

Oh! I haven't been much in the baking aisles of UK/Irish grocers, but cornmeal might be labeled as Indian meal.

Yeah, the stuff I have I got from an Indian shop: maize meal. Polenta's too coarse, but even if it wasn't, you can only get it cooked! Oy!

I'll try looking at new recipes, instead of getting my old one to work. Sigh.

Hmmm, I've never been to a Bodeans, but they might tell you where they get theirs.
