What's cookin'? On the stove I gots: kale with caramelized onions and chorizo, skillet cornbread, potato and onion pancakes.
I have a friend coming for dinner tonight to celebrate her birthday so there's a chicken in the oven, stuffed with a handful of thyme, a lemon cut in two and TWO heads of garlic (small ones) cut across. I rubbed butter into the skin and seasoned it well with salt and pepper.
With the chicken we're having little baked potatoes and I've scooped out a little half-sphere in each one using a melon baller and put herb butter in, plus roast brussels sprouts and chanterey carrots, steamed cauliflower and broccoli and gravy made with the lemony, garlicky, thymey chicken juices.
To follow, pineapple, cut into big chunks and roasted with a little ground cinnamon and a drizzle of honey, served with Greek yoghurt.
It was going to be pork chops smothered in thyme gravy, greens, and sweet potato fries, but then I found out that my friend who is visiting from Montreal is getting in before dinnertime, and she doesn't eat pork, so the chops will stay in the freezer and we will order in.
(yay! visiting friends! she leaves on Tuesday so that will keep me nicely distracted until the election is over)
I am making a lovely turkey meatloaf-with-salsa recipe I found earlier this week. Steamed swiss chard and homegrown roasted dilled new potatoes to go with.
It's no big, happens all the time. Cuts down on my tortilla abuse.
i've finally had some roasted rosemary garlic chicken with fresh herbs and sour cream in a soft tortilla and i can feel my cells welcoming the glucose.

Oh, that sounds great. Potato pancakes! What a good inspiration for me tonight. My larder is close to empty but I do have potatoes and onions. That and carrot soup sound like dinner.
I'm pondering trying Mark Bittman's no-knead wheat bread. I don't have rye flour, though, and I'm wondering if I can substitue white.
Mmmmm, I'll be right over, Specklet, that sounds awesome.
I'm making a spinach mushroom lasagne, but I'm still trying to figure out the best way to make the marinara sauce for it, as the people we are having over don't like onions (!?!). I guess it's going to be mainly tomatoes and garlic then. I briefly thought about sneaking some minced shallots in, but then thought, maybe onions react funny for them, and if so, they'd probably taste the shallots too.
I'm going to make myself feel better though by making a from scratch garlic bread, which I don't do nearly enough but always makes me happy.
I had planned on making sugar cookies for dessert, but I am rapidly losing the motivation for that. Dessert may just have to be more wine and beer.
