Only one I can think of at the moment is the one in the "Little House on the Prairie" cookbook. (It also has a recipe for homemade doughnuts with lard; I was prompted to pull it out the other day after the pork fat thread.)

Been on a beet fascination lately. Maybe i need more potassium.

I canned some pickled beets this year from my mom's recipe. I'm not sure it's what you're looking for, because I've never had beets from a Jewish deli. It's probably moot anyway, because I think I wrote the recipe on a legal pad and then recycled it. If I can scrounge it up, though, I'll send it to you.
