It's blueberry time. Here's a cake to make. It's really good.
I just made this for dinner. I may die before it cools enough to eat. It smells delicious.

Do you know, all this time I've assumed that "coffee cake" has coffee in it? So I have never eaten it, because I don't like coffee-flavoured things (although I love coffee, go figure). But... it's just cake you eat with coffee? Huh.

Yeah, it's cake you eat with a cup of coffee. It can be anything, but often it's a rich yellow cake, made moist with lots of eggs and often sour cream. The bitterness of coffee offsets that rich character well, but it would work with tea as well. There are all kinds of coffee cakes> - crumb cake, cinnamon, banana, apple-walnut...you name it.

Coffee cakes remind me of my grandma.

Oh my dear lord and god. This is really good. I stuck a handful of frozen spinach (thawed, of course) in as well, and some dried chives cause I hate dill. But the whole thing comes together in about 30m counting the shredding of the zucchini. And it's really tasty.

Also, now you're making me want crumb cake where it's half-crumbs and half-cake. I hope you're pleased with yourselves.

Do you think it would be good with fat free ricotta (which is what I have in my fridge)? Or should I buy lowfat?

I tend to go for full-fat everything, but I think it would still be pretty good with fat-free or lowfat ricotta. I might drop a hit of cream in there to make up for it but that's just how I roll. It is a wonder that my cholesterol is as low as it is.

Going back for seconds. It's a good thing I have an extra tub of ricotta. I may make another one tomorrow if this one is gone. Which it might be.
