E-Z Peasy Chicken →[More:]I do this every now anf again for my family:
4-6 chicken thighs or 4 whole chicken legs
a little olive oil
1 15 oz can plain tomato sauce
4-6 slices of cheese (provolone is the best, I think, but smokes mozzarella is a win too)
4 whole cloves of garlic
Preheat oven to 350.
Salt and pepper the chicken.
In a large ovenproof skillet (make sure you have a lid) with high sides, brown the chicken in the olive oil on medium-high heat.
Turn off the heat, dump in/over the tomato sauce, drape a slice of cheese over each piece of chicken, drop in the garlic cloves, slap on the lid and put into the oven for 45 minutes.
Remove from the oven and let cool slightly. Be sure to ladle the sauce over served pieces of chicken.
I served this tonight with herbed haricots verts.
