I was going to try some bear meat once. ..it was so strong, I got it up to my mouth (on the fork) and I could not put it IN my mouth, it smelled so bad. . .so I passed.
We ate bear when I was growing up. I really don't like the taste of most red meats (exceptions: ribs, cheeseburgers), but didn't notice anything worse about the bear than the moose we had all the time, or even beef steak.
There is, however, a big difference in taste between brown and black bear meat, but I can't for the life of me remember which is which. Black bears eat more berries, brown bears are more scavangers, so I would think brown bear meat would be more... pungent.
We had a block party where the neighborhood hired pro barbecuers and talking with them they told me about all the various wonderful frolicking fauna of the forest they had roasted the fuck out of four our pleasure. They mentioned that rattlesnake and bear were particularly tasty.
