Yummy cabbage! →[More:]
Accidentally created this cabbage dish tonight.
I took one regular head of green cabbage, quartered it, then cut the quarters in half. I didn't remove the core because I wanted the wedges to stay together.
In some hot olive oil, I browned the wedges on each side, adding salt and pepper as they cooked. I covered the pan briefly so they'd also steam a bit. When the wedges were brown on both flat sides, I turned them onto their backs to brown too.
At that point, I tasted a browned leaf and it tasted strangely like.... BEER! Since I happened to have a beer open at the same time, I added about 2 tablespoons from my bottle (Snowcap ale) to deglaze the pan. Also added a knob of butter -- probably 1 tablespoon -- and about a teaspoon of caraway seeds.
I let the beer cook off and the sauce thicken up a bit, then added a splash of red wine vinegar.
I must admit that I ate most of it straight from the pan. But I served the rest at room temperature. It was soooooooo yummy.
I know maybe it doesn't sound good, but it was. Try it.
Also, it cost about $1.79 to make. Win.
