To make the cake...

Mix 3 cups self raising flour and 2 cups sugar.
Add 1 teaspoon of baking soda.
Add 1-2 teaspoons of mixed spice to the mix.
Add 3/4 a cup of vegetable oil and 2 cups water and mix it up.
Add 1 large grated carrot, half a grated apple, some roughly chopped apple and a small bag of mixed dried tropical fruit.
Mix it up for a while and then worry that the mixture is too wet.
Slowly add another 1/2 to 3/4 of a cup of flour.
Worry some more that the mixture is still too wet.
Grease a large cake tin.
Layer the bottom of the cake time with thinly sliced potato.
Add 1/3 of a cake tins mixture to the cake tin.
Add more slices of potato.
Slice the rest of a large potato and add it to the mixture
Add another 1/3 of a cake tins mixture to the cake tin.
add 4 or 5 thin slices of potato to the top of the mixture.

Pop it in the oven at 175 degrees for 45 minutes.
Realise that it's still barely cooked.
Cook it for another 40 minutes.
If the top starts to burn then turn the oven down and worry.
Keep checking it every ten minutes. Use a toothpick to prick the cake to see if it's done.
(If the toothpick comes out wet, it's not yet done)

Finally, sieve icing sugar to the top to taste.
