Rice noodle recipe ideas? Hello bunnies. I have some rice noodles and I would like some ideas as to what to do with them.[More:] I have eaten Pad Thai (which I like a lot) three times in the last week, so that's out. I will eat pretty much anything, am not vegetarian but I don't object to veggy recipes, and I have access to a Chinese supermarket and a normal fruit and veg market (which also sells meat and fish).

So, what have you got? Also, noodle preparation hints would be welcome, as the rice noodles (flat stick things) turned out quite tough last time.

Rice noodles are sooooo great tossed with chopped artichoke hearts and cracked black pepper. Maybe some locatelli romano if you're into cheese (I'm not).

It is! If you used canned, which are actually very good, use the juice in the can too. Chop up the artichokes and saute them with butter in a pan, with some salt and pepper. Add a little olive oil, some chopped garlic, the cheese, and at the last minute, add the juice of the can. Then add the noodles to that and toss till heated through. My fav quick dinner!

Yeah, that would be pretty good right now, some Pho. I'm going to order pho for lunch now. I like getting it from the crazy pho place, but it's sooooo salty, like drinking a pint of beefy sea water. Awesome.

Listen altolinguistic, you can use cheap ass London Broil, slice it thin as you can, one London Broil gives you more than enough beef to stuff four people to the gills on Pho.

OK, I used to live in London and I had to Google 'London broil'. Point taken, but I think iconomy wins this round. I'll let you know how my future pho experiments go.

London Broil is unknown here. Well, we do have it, but it's called flank steak. You would get a look of "wha?" from the butcher if you asked for London Broil.

Mmmmmm pho. Soak the noodles in cold water for a bit, it helps keep them from getting tough when cooked.

Also good: cook the noodles and rinse in cold water, slice up some cucumbers and carrots into long thin strips, toss everything with a bit of soy sauce and sesame oil and sugar and salt, serve chilled. I have no measurements, but you won't need very much of each.
Even better WITH CILANTRO (yeah I said it).

thanks, ej, I knew you'd be able to cross the cultural divide. And thanks, casarkos, for the cooking advice, and yes, whatever I cook will have coriander in it. I'm not one of those people.

Is it too late to suggest pho?

That's what I had for lunch, I walked all the way to Mulberry st. to get it and I also had summer rolls with shrimp and Vietnamese iced coffee. Fantastic. I had the Pho Tai Bo with rare, rare, rare beef.

Also if I was in London I would make a scene when the butcher didn't know what London Broil was. I'd just pitch a huge, giant fit. "WHAT THE FUCK?"

Pad Thai! Good god. Life would be a cold, empty trudge to the grave without Pad Thai. Of course, I don't have a good recipe handy right now, but I'm sure you'd have no trouble finding one that looks good to you. It's not hard to make, really!

Soaking is indeed essential to avoid tough cardboardy noodles. I soak them in hot water for about 15 mins.

Also, you could make pho. Man, do I miss pho. I will also add that Pho Bich Nga is one of the most unfortunate restaurant names I have ever encountered.

The past three days of my life have been characterized by a rice-noodles-in-the-disposal incident.
