Lettuce entertain you... So, somehow I managed to buy way, way too much lettuce, and even though we have salad almost every day, there's no way we will be able to use all this up that way before it goes bad. I'm probably going to make cream of lettuce soup (though without the bouillon, which I detest). Any other ideas for recipes that happen to be heavy on the lettuce (and/or potatoes, which I also seem to be overstocked on)?

I dunno what to do with lettuce other than BLTs, but potatoes...just off the top of my head, there's aligot and potatoes O'Brien, and there's a bunch of Peruvian recipes that do unspeakably wonderful-sounding things to spuds -- I've seen a couple of threads in the blue on Peruvian potato dishes, I think.

Sure... but I want to know what recipes the bunnies love; bunnies know all the best lettuce tricks, I hear. :)

Also, I'm not really such an shopping airhead normally (I think), it's just that for the last 20+ years I've happened to live quite close to open-every-day farmers markets, so I could just wake up any given morning, decide what I wanted to cook that day, and go pick up the ingredients quite easily in my own neighborhood. Where I am now has a very small, very expensive organic greengrocer within a few blocks, and a big-big street market that's not really very close that happens once a week (plus, also, the big Athens downtown outdoor market area, that's also not very nearby, though still within walking distance - but you don't really want to carry a very heavy load for that distance).

So I buy some things from the organic place, but can't bring myself to spend nearly five euros a kilo for things like peppers, and so I'm stocking up on other stuff from the street market once a week... but haven't quite got the hang of keeping a mental list of what I already have (like, gee, lots of lettuce) and what I don't (mushrooms? where are the mushrooms, please?).

Well, you can always use some of the lettuce leaves to wrap yummy stuff in. Or you can use them as a base for stuff like pasta salad and the like.

The simplest way I enjoy my 'taters is home fries: cube them and sautée them in olive oil with a little garlic and rosemary. Add a dash of salt and some black pepper.

ooh, look, Pax: Papas a la Huancaína, in which the traditional cheese can be replaced by feta, according to the contributor. Plus, black olives, which I have a bunch of right now. Sounds pretty yummy.

I got nothin' on the lettuce. But for the potatoes, you could make the tastiest fries on the planet earth:

The One and Only Truly Belgian Fries

It's a little time consuming, as you have to fry them twice, but it's well worth it. Make sure to cook in small batches and eat them immediately after the second frying.

ooh, maybe lettuce wraps of some kind of yummy seasoned potatoes. Like the kind of filling you get in samosas...

wow, that does sound pretty good. Now I know I need samosas for dinner! A great big pile of them!

Oh, my... I actually do have a few things that could work with that: garam masala, split peas, ginger, hot pepper flakes, coriander... Hmmm. I've never made samosas before, but this sounds superyumyum.

(Amy's does a really yummy samosa wrap that you bake so it doesn't need to be fried though!)

Vietnamese lettuce wraps with shrimp.
I made something like this one time out of cooking light only it used ground chicken and had a really strange to my ears name that I can't remember, something like Clunk! or Bork! or Shmoog! They were, uh, not an unqualified success - I believe the exact quote was "Mom? Never make these again. Never." However. The basic idea still seems good.

When I googled Vietnamese lettuce wraps I got all kind of nifty yummy sounding things of which the above was the first link & the best sounding. So I'd go with the wraps. Only if it's ground chicken and has a funny name? Avoid.

Also, tacos use a lot of lettuce. Plus you have to cut it all up and then whatever doesn't get used has to be composted, alas, for it will not keep. This is the passive-aggressive guilt free method of lettuce disposal. Or you could quickly run out and get a bunny! Guinea pigs also enjoy a lettuce heavy diet and make adorable wheeeping noises to boot.

Heh. Well, I do kind of love the idea of pet acquisition due to bad grocery shopping skills - but then I shiver to think what I might have to adopt if I buy too much liver, or beef tongue. not that this is likely to happen. at all.

What kind of lettuce? If it's strongly flavored enough (if it's spinach-esque; even mesclun mix would probably be ok), you can chiffonade it on top of other soups or stews.

I have a fantastic recipe for farro, potato, and arugula... stew? I think the recipe calls it a soup, but it ends up more side-dish - stew-like. I will post the recipe when I get home this afternoon (unless you're, like, stuck with iceberg, in which case that recipe wouldn't work at all).

I wonder if braunschweiger with diced onion and capers would be as good wrapped in lettuce as it is on shredded-wheat crackers? Might have to try that on romaine.

I make home-made vegetable broth and throw my lettuce in there at the end of the week. Baby spinach too. You need an onion, some carrots, celery, garlic, peppercorns, and any other veggies that aren't too strong. Mushrooms, tomatoes, corn, parships, bell peppers, rosemary, and thyme are also good.

Hrrmmm... the recipe I mentioned probably won't work with romaine.

But I got it from Mediterranean Grains and Greens by Paula Wolfert, and it looks like a fair number of her recipes that include romaine are online. I would trust any of them.
