Honey [More:] What happens to honey in the fridge for like a year or more? Did it freeze, or turn to wax? I need it for a chicken thing in the crockpot. Stop me from turning it Bad.
It turns to bees. Dont open the jar.

It's fine -- the sugar crystalizes after a while. You can bring it back by putting it in the microwave for 1 minute or so. Use defrost, though. Don't want it to get too hot. And be careful, because honey can boil over and make a big mess.

Another alternative, if you have the time, is to put it in a really low oven overnight.

De-crystallization:
If your honey becomes cloudy, grainy and difficult to pour, warm the honey to reverse the crystallization process. To do this, bring a saucepan of water to a boil and then remove it from the heat. Remove the lid from the jar of honey, and place the jar in the hot water until the crystals dissolve.

Honey never turns bad. It's the only food that can quite possibly last forever. Honey's been found in Egyptian tombs - completely crystallised, but if it were heated, it's still edible. There's no need to refrigerate it either.
