They need to use duck eggs and a buckwheat pancake recipe. Duck eggs would result in a firmer sponge, especially if you also used more egg than you normally would.

Regular old buttermilk flapjacks are waaaay too crumbly.

Would building this thing outdoors in january be considered cheating? Get 'em cold enough and they'll solidify.

Maybe my favorite variety: cornmeal flapjacks. A-maize-ing!! (Be sure to use real maple syrup.)
