Taco spice? (you have 30 minutes!) [More:]ok Mechas, you have exactly 30 minutes to provide a recipe for a kickass skirt steak rub. My roomie and I are making tacos tonight.

P.S. I already told him that under no circumstances would I use ready-made taco mix. Bleah!

I have plenty of ingredients / spices at home and a good grocery store less than a block away.
We're always looking up stuff like this on cooks.com- here are the results for "taco spice."

A lot of times we end up combining bits and pieces from two or three different recipes to suit our purposes or what we have on hand. Good luck! (also: MMM! Tacos!)

What is this... taco spice? Is that like scary spice?

Carne asada tacos = diced grilled steak on two small, soft white corn tortillas garnished with diced onions and cilantro with hot salsa rojo or verde, and *maybe* a little pico de gallo. Depending on the cook there may be salt/pepper on the steak.

Carnitas are often marinated, but that's usually pork. Everything else for a good taco is just plain old diced fatty meat that's been either boiled, steamed and/or grilled in various combinations. It's all about the salsa. If you can't get/make fresh, real salsa - not that chunky stuff - try Tapitio.

Off the top of my head, I'd probably do something along these lines:

t Sea Salt
t Freshly Ground Black Pepper
1/2 t Red Pepper Flakes
t Paprika
t Cumin
1/2 t Chili Powder
1/4 t Garlic Powder
pinch of Cayenne
pinch of Cinnamon
(squeeze half a lime over the cooking meat if available)

and of course

pinch of cilantro

Adjust according to taste.
Ground cumin, ground chiles (chipotle, preferably), black pepper, salt, a tiny bit of allspice, dried oregano, lime juice.

There you have it.

I just use some onion, chilis, garlic, oregano and cumin to taste.

oh, and as mudpuppie said, of course some salt and lime juice. I don't think I ever bother with black pepper in my taco meat.

I use IRFH's recipe,more or less, but use the smoky hot paprika. It's good.
