It's about the links! Sausage links, that is. At home I have two packages of sausage in the fridge: a pack of cilantro & peppers chicken sausage and a pack of Boars Head red hot beef links?

Which should I fry up? I've got kraut, horseradish & mustard to complement either, and I'll get beer for accompaniment.
I'd go for the hot beef injection...with a liberal helping of kraut. But that's me and i'm clearly off my rocker.

That cilantro & peppers chicken sausage sounds great, but I don't think you can go wrong with either.

Chicken sausage can be dicey, sometimes they grind the meat too fine and you lose that coarse chewy sausage-ness.

Beef with the kraut. Save the chicken for when you have some pasta or something to go with it. Sometimes it's kind of dry; it needs a sauce.

Damn, this is just freaky. I'm cooking up some links and kraut for dinner tonight. (Last night was veggie night. Purple artichokes, marinated and grilled portabello slabs, brown rice. OMGitwassooogood. *swoons*)

sauerkraut requires pork sausage in order to truly attain nirvana, but in this case I think I'll cast my vote with the beef, too.

Reporting back: I fried up the hot (and I do mean hot, they had crushed chile peppers in 'em) beef links, poured some kraut and then some beer on em halfways through and let em simmer for a while. They were great complemented by horseradish and mustard, Pips gave 'em a rave review. Thanks, guys.

My mouth is kinda scorched but I have a wedge of gorgonzola in the fridge. Maybe later.
