I think this came out of a Southern Living or a Taste of Home or something.

Her notes are showing she uses two large carrots and three med sweet potatoes instead of two full pounds of carrots and adds panko to the saltines for the topping.

I reckon you could use most any root veg as you see fit. Just make sure when you're steaming them, you stop short of where you want them to be, b/c they'll soften more in the oven.

Serving size 8 my ass. I could eat half a dish in a sitting.

MADE IT. Folloqed the recipe except that I added onion; fried it in the butter before I melted the cheese. So yummers.
