I have lots of carrots, radishes, potatoes, and eggs. What should I make for dinner? [More:]I don't have any greens or cheese, and I want to cook vegetarian.
I also have half an orange pepper and tons of pantry stuff.

I made a Spanish egg and potato tortilla last week and it was good but I want something new.
Any ideas welcome!
oooh you had no takers! What did you end up making? I am terrible with stuff like this bc I would have just eaten the carrots and radishes raw, hardboiled the eggs and fried the potatoes. Nothing cohesive at all.

Haha, I ended up making potato and carrot latkes which turned out surprisingly good!
I added egg, flour, and onion and then served them with apple butter and sour cream and ajvar. The apple butter was SO much better than apple sauce, I am going to make it A Thing now.

Still have those pesky radishes and about a million extra carrots. Might just grate/chop them up and freeze them for later, esp because I have ANOTHER stupid CSA load coming in today which will probably be more of the same.

Slice the radishes and julienne the carrots, mix 'em together, and pickle 'em. You're on your own with the eggs and taters.

Here is a recipe for something called carrot butter which looks pretty good to me. Of course I just got home from work and am feeling pretty hungry. Try to ignore the very annoying prose and just skip down to the recipe. I haven't tried it yet but does look interesting and it will use up some carrots.

GUYS, I JUST GOT 6 MORE LBS OF CARROTS

I donated the radishes and turnips from today's share to other CSA people since I just couldn't look at more of them.

I cut up the rest of the last share of carrots and am freezing them. With the new 6 lbs, I think I am going to try this carrot custard and that carrot butter Kangaroo linked to (sounds interesting).
Unfortunately I have no upcoming potlucks and am averse to pickles, though I will see if my husband wants me to try making some for him.

This carrot cake uses up lots of carrots and 4 eggs, so maybe that will go on the list too.

I'm gonna turn orange.

My mom has a really good (and very unhealthy) carrot casserole that she makes on holidays that I love. I convinced her to make it somewhat healthier by adding sweet potato, but in still involves a lot of butter and whichever cracker-type crumble of your choice. If you want the recipe, I can ask her to e-mail it to me. It's......damn good.

Sunshine slaw

Ingredients:
4 carrots, grated
1 1/2 apples, peeled and chopped
1 teaspoon fresh lemon juice
1/3 cup raisins
1/3 cup slivered or sliced almonds
1/3 cup low salt mayonnaise
Instructions:
Toss carrots and apples with lemon juice. Add raisins and almonds.

Mix in low salt mayonnaise
