I had forgotten how satisfying a simple BLT and coffee can be for lunch. What have you recently rediscovered?
Tahini/lemon/garlic salad dressing. So, so delicious. Just mix 'em all together in whatever ratio you desire (according to whether you palate prefers creamy, garlicky or lemony flavours) season with salt and pepper and pour over a great big salad. Everyone I've served this too goes "Ahhhh-mmmmmm" when they eat it.
Freshly baked bread, slathered in butter. I have baked a fresh loaf every Saturday this winter, and my husband and I snarf through the damn thing within an hour of it leaving the oven.
So it's basically hummus without the chickpeas and oil, yeah?
It is, and because it's poured over a salad, it's an unexpected treat to get those flavours in a salad dressing.
I forgot to add, you might need to add a little water to get the right pouring consistency. And you can also add lemon zest too, if you like it extra lemony.

Ingredients:
2 avocados
1 lime, juiced
1 clove garlic, minced
1/4 cup minced onion
2 tablespoons nutritional yeast
1/8 teaspoon cayenne pepper or more to taste
1/4 cup water
Instructions:
Place all ingredients in a high-powered blender or food processor and puree until smooth. Add additional water if needed to adjust consistency.
