coconut milk So how long would you keep some in the fridge before using? After using about half a can and putting the rest in an air tight container?
I've kept about the same amount in the fridge for at least a couple weeks without a problem. It could probably last longer.

Like, the canned stuff? I think it's got enough fat in it that you'd smell if it's gone rancid.

I bought boxed coconut milk (more like almond milk) and it smelled ok but did not taste ok. That was after... three weeks in the fridge? The carton said 10 days in the fridge after opening.

If I don't use the whole thing I just freeze it. It lasts forever, for values of "forever" that are probably a year or less. I actually called the Taste of Thai consumer information number once to ask this question, and they said freeze it for up to 6 months. But you can push that and not die, as I am here to demonstrate.

Yeah, the canned stuff. I meant to freeze it initially (it's what I usually do), but then I just forgot and I found it today.
