What can I make for dinner that involves ricotta cheese and no oven? The oven is dead but the stove top is fine. The ricotta will expire in a week. Any & all - well, within reason and a mediocre American supermarket's reach - other ingredients are obtainable. Thank you, oh gourmet chefs of metachat!
We used to make the following simple sandwich when I was a kid:

In a Peta, spoon in Ricotta, shredded Mozzarella or Cheddar, and sliced veg - pepper(s), carrot, sprouts, anything you like.

That's it. You can even cook the veg in a fry pan first (like broiling them) for more flavor. Use just a touch of oil, maybe a skooch of salt and pepper, too. Yummy!!

I have seen cast-iron pans used on a stove to serve the same purposes as oven cooking. So you can make ricotta anything if you have the pan!

I made some incredible and simple ricotta cheese gnocchi last year. Leftovers freeze really well too. Here's the recipe I used, with good instructions.

Well, a variant of the slow cooker vegetarian lasagne is in the crockpot as we speak. So let's hope it's good! My fingers are crossed but I bet it's great. Last night I gave up on serious cooking and just had zucchini fritters and a salami sandwich. Thanks y'all for all the suggestions! Yum!
