Baked Falafel. Om-nom-nom-nom ... [More:]Recipe here. I also added a quarter of a preserved lemon with the shallots and garlic, and omitted the salt (due to the salt in the preserved lemon).

Total calorie count is around 400 and it's gluten free and vegan. I didn't make the tahini aioli, but drizzled a little ranch dressing over it instead.

Yummy Ranch Dressing

1 cup mayonnaise
1 cup buttermilk
2-3 tablespoons chopped green onions (the green part)
1 teaspoon dried parsley (or 2 teaspoons chopped fresh parsley)
1/4 teaspoon each of:
Onion powder
Garlic powder (or about a teaspoon of fresh minced garlic)
Paprika
Salt
Pepper
1/8 teaspoon ground cayenne pepper (be careful with this -- it can add too much bite if you use too much)

Mix it all up and away you go! I think this tastes about four thousand times better than any bottled dressing I've ever tried.

You can substitute easily for buttermilk. Just add a glug of plain white vinegar or lemon juice to (nonskim) milk. Stir, let it sit.
