What's for dinner? I just ate kangaroo!

Before I cooked it, I looked online about the best way to cook it and I read that it can be quite dry and mustn't be overcooked, so instead of using salt, I marinated it in dark soy sauce and cooked it in a hot, hot skillet with a little olive oil and a sprinkling of black pepper. I let it get a dark seared crust on it, then wrapped it in foil and let it rest on the counter while I grilled some peppers, courgette and asparagus.

OMG, that meat was good. Perfect medium rare, a lovely charred crust and tender meat. I still have another chunk of it marinating in the fridge for tomorrow, and I will take photos. Today I was too hungry to remember.

So, kangaroo meat is a red meat then? Yum! I have had ostrich before -- it's kinda tough and beefy.

Tonight, we are having leftover lentil soup and some homemade whole wheat bread that I made this afternoon to go with. I think I need more practice with bread, though, as it looks a little dense. Maybe it rose too much in the first rise?

I'm making stew. The meat's been simmering for a couple hours and I'm about to go add the carrots and potatoes. It smells good and it's making me hungry.

When I lived in Australia, we used to get burgers from this guy who sold them out of a cart by the harbor. He would put pickled beets on top of the burger by default; the first time I bit into one .... *shudder*

Anyway, he got busted for using kangaroo meat instead of beef.

Taco salad, built around the remnants of a roast chicken from Monday. This will be its fourth meal appearance, this time enhanced by salsa, sour cream, black olives, greens, black beans, and cheddar.

I made chicken in enchilada sauce then just slapped it on a tortilla with cheese. I was running out of patience :) Hungry!

I made whole wheat pasta with lemon, broccoli rabe, hot pepper flakes, and cherry tomatoes. I made enough for my dinner and 2 lunches. I also started some panzanella in the fridge with bread, tomatoes, red bell pepper, red wine vinegar, garlic, and oil. I forgot to buy basil so I will be doing that tomorrow.

I made a burrito. A very simple burrito (refried beans, salsa, hot sauce, cheese, and onions), but at least I was cooking, which is a step in the right direction.
