Margarita Grilled Cornish Game Hens are super yummy awesome. We added a minced jalepeno to the marinade. Definitely recommended. Even the cat, who has never evinced any interest in human food, was trying to jump up and eat off our plates. [More:]We served it with grilled corn (yes, out of season, but I was out of ideas for side dishes that might go with the main recipe) and a salad of red leaf lettuce, chives, shallots quick-pickled (i.e., soaked for 20 minutes) in champagne vinegar, and a dijon vinaigrette made with the shallot-soaking vinegar. Oh, and I butterflied the hens rather than just cutting them in half.

Definitely more of a summer meal, but we've had wacky weather lately, so it worked for us.
NOM!

My discovery of the day (which seems like more of a warm weather thing too): bourbon, peach bitters, club soda, and a lemon rind garnish. Floral and complex but not sweet.

Ooooooooh. I have never seen peach bitters, but I will definitely be looking for them now.

Sounds lovely, especially the quick-pickled shallots.

I am on a quest to discover/invent reduced-alcohol cocktails that look pretty and that mark the transition from day to evening in a celebratory kind of way, but without so much booze. I stumbled upon a good one last night - a couple of drops of angostura bitters, a measure of framboise (15% alcohol so just like a little bit of wine) topped up with tonic. Nom. Would work nicely with a bit of gin.

You eat well, occhiblu. You're always making the best recipes. Last night my husband made dinner. That was a treat.

I had cheese and crackers for dinner last night, and pasta-from-the-store the night before. I gotta get cooking again.

On a side note, whilst in Tucson the other weekend, had a prickly pear margarita, made with juice from my sister-in-law's front yard prickly pear.
