Margarita Grilled Cornish Game Hens are super yummy awesome. We added a minced jalepeno to the marinade. Definitely recommended. Even the cat, who has never evinced any interest in human food, was trying to jump up and eat off our plates.
→[More:]We served it with grilled corn (yes, out of season, but I was out of ideas for side dishes that might go with the main recipe) and a salad of red leaf lettuce, chives, shallots quick-pickled (i.e., soaked for 20 minutes) in champagne vinegar, and a dijon vinaigrette made with the shallot-soaking vinegar. Oh, and I butterflied the hens rather than just cutting them in half.
Definitely more of a summer meal, but we've had wacky weather lately, so it worked for us.
