vroom, bbrr bbrr vroom!! [More:]

this makes me happy! (from Reddit, titled "I'll just put this over here").

Also, do this, it will make your mouth happy:

get yourself -
1 can yellow corn kernels
1 can black beans
juice of 1 fresh lime (1 tbsp more or less)
1/3 bunch green coriander/cilantro leaves, minced
1/3 cup diced red or sweet onion
1 tsp ground coriander seed
1 tsp ground cumin seed
1 tsp mild red chile powder
1 medium clove garlic, minced or crushed
some salt, start with 1/2 tsp, adjust to taste

Drain the corn and beans, throw everything together into a small bowl, mix it up and eat with corn chips or over fresh greens, or add to carne asada and make tacos.

oooooo lfr, add a little minced chipotle in adobo to that and it will be so crazy delicious it'll knock all the gray out of your january. in the summer it's amazing with raw corn. omnomnom, man.

peachfuzz! how've you been lately?

the mister has some fancy-schmancy adobo rubs and new mexico chile-type stuff but I am lazy and like the bright freshness of simple coriander + lime for this one. I shall try your tip next time tho.

we ate the entire bowl of salsa whilst watching the pats and jets do battle on the teevee tho, so that's gotta count for something, right? :)

Thats sort of a variation on something I make a lot - you want to eat it right out of the bowl with a spoon. Black Bean & Corn Salsa. Sometimes I make that as a bed for grilled chicken, and you can also just use the leftovers to fill a tortilla or wrap, make a quesadilla, or scramble with eggs. there's no going wrong with nicely spiced corn'n' black beans.

That's so funny- I just made a giant bean and corn salad yesterday- mostly the same ingredients but I do 2 cans black beans, 1 kidney beans, 1 chickpeas, 1 corn and I add scallions and a bit of apple cider vinegar too.

lfr, you inspired me to make this -- by luck I had a ripe avocado on hand so I diced that up and tossed it in as well -- OMG SO GOOD. And I now have carne asada marinating away in my fridge, which shall be grilled this evening. YUM and thanks!

by the way I just absolutely love everyone's variations on the theme :)

I mainly stick to simplicity with this one because (as admitted above) I am lazy, plus this is one of my OMG TOO [tired/drunk/stressed/frazzled/lazy] TO THINK GRAR HUNGRY FEED ME NOW ARGH!!! staples, so it needs to take like, five minutes tops the way I roll.

carne asada tacos... man. I could use some of that right now. I am eating pesto pasta with pine nuts and artichoke hearts, with some cheap yummy pinot grigio on the side tho, so I don't feel too sorry for me.
