I had a bunch of leftover polenta from dinner the other night, and I've been reheating it for breakfast and putting a fried egg on the top, and OMG yummy. And I was sitting here thinking, "I wonder why polenta isn't really considered a breakfast food?" and then I was like, "Oh, right. Grits." [More:] My years living in the South are apparently rapidly fading from memory.

Slightly related: I had a dream a couple nights ago that I was traveling through North Carolina and I was supposed to meet mygothlaundry for breakfast at a very cool diner that had bright murals on all the walls and an enclosed slide to go from one section to the other, but I got embarrassed and shy and left before she arrived. The end.
It's also good pan-fried with butter and honey!

OH YES leftover polenta. I prefer leftovers to fresh-from-the-pot for exactly that reason. I slice it and panfry it up in some butter or oil and serve it with a big pile o' greens and maybe an egg. YES.

We usually have something like eggplant parmesan but then substitute half the eggplant with polenta rounds.

I tried polenta once and wasn't impressed. Maybe it was bad polenta.

I lived there for about six years, in middle school and high school. Before that, I grew up in the Chicago suburbs.
