Green bean casserole without green beans? I'd like to make this today, but the BF doesn't like green beans. Do you think I could substitute broccoli instead?

Broccoli will work but the florets will likely disintegrate.

Broccoli or asparagus sound like good substitutes to me! I'd pre-cook the veg a bit, just blanch and mix them with the heated sauce, then pop 'em in the oven long enough to get crispy on top. That way the florets don't turn to mush. (Unless you like 'em mushy --- I know plenty of people who do!)

Or do you have any other green veggies on hand, maybe in the freezer? When I realized last night that we were missing the onions for the creamed onions, I changed mid-stream to spinach gratin (with frozen spinach we had on hand, the cream sauce from the onions, and bread crumbs) --- it's a different process but definitely a kissing cousin to the green bean casserole. I bet it would work out great with the soup and crispy onions!

Heh. The only veggies I have sitting in the freezer are green beans and okra. Creamed onions sound awesome and creamed spinach is even better. I think I might end up doing that.

Back from the store. I've decided on some sort of creamed spinich pie quiche ricotta cheese bake with French's onions on top. I'm super excited. I also bought turkey necks! Who knew you could just get necks! They're the best part!
