I must respectfully disagree with him. McDonald's fries are not the best fries. I mean, I guess he's saying that he's making the perfect thin and crispy fry, so maybe that's true. But I prefer fries with a little more meat on their bones.
The author unnecessarily idolizes McD's fires. Insisting on the pale color of their fries drives him to needless trouble. Cook's Illustrated has come up with what may be the best French fry recipe ever--put the potatoes in cold oil and crank up the heat until they're browned. It's that easy, and they're really that good.
