I don't know what this says about the way my brain works (or doesn't work, as the case may be), but for some reason I never have any trouble with this.
If you do well on the test, it means that you have good executive functioning (specifically directed attention). When the test is administered, usually the subject first does the test without conflicting information (just reading the words printed in black, or just naming colors displayed in blocks, not words), and then does the test where they have to name the colors written with conflicting words. Their performance on both tests is timed, and then the time on the two tests is compared. The difference between the times is how you determine how good their executive functioning is.

I think this can be learned. I did this test as part of a cognitive-science teacher training program years ago. If you do it straight, it's very challenging. But if you coach yourself first -- as in saying to yourself, "OK, you're going to be presented with a word written in a color. Just look at the word and ask yourself what color the letters are - then look for the answer" you do fine.
If you look at both answers first, though, the tendency is to get distracted by the matching color name and ignore the color of the letters.
So it might show you something about visual processing. But it's also an excellent demonstration of how an adaptive strategy can dramatically improve performance.
I just programmed myself to push the button with the word that was NOT showing. It never had a match (no red Red or orange Orange) so I got 100%. I told you I'm a wiz at test-taking.
Yeah, I also sucked the first time, as I didn't properly read the instructions! Boy was I shocked at my poor score. Then, I did like Miko said, sorta, and just ignored the form of the letters, and focused on the colour, and 100% was easy enough. Stupid brain, so easily tricked.
