How Do You Solve A Problem Like Scallops? So I'm making spicy pan-fried bay scallops in panko tomorrow - I know right? - but I have no idea what to serve with them and I officially sick of salads. Ideas?
Wilted greens?

I've done pan-fried scallops with oven-roasted tomatoes before. This recipe looks pretty much about right, though I think the one I used also had you drizzle a couple tablespoons of balsamic vinegar and a couple tablespoons sugar on the tomatoes, too.

To serve, put down a layer of tomatoes, then some shredded fresh basil, then the scallops.

seeing as the scallops will be crunchy and warm, you might want to go with something with contrasting textures. like, say:
  • a risotto (with asparagus or spinach or possibly lemon zest and mascarpone)
  • bed of shaved vegetables (ribbons of asparagus, zucchini, carrots)
  • bed of citrus-spiked lentils
  • vegetable soup

risotto/couscous/asparagus works well.

Also - get a great bottle of New Zealand Sauvignon Blanc (I recommend Nautilus or Sole Beech for ultimate taste amazement that won't destroy your GDP).

Also you might be able to score some good Gruner Veltliner or a nice Chablis for that meal in NYC.
